Rachel Parsons qualified as a Solicitor in the firm’s regulatory and corporate defence team in September 2025 and is based in the Norwich office, following her training contract with the firm.
She advises on a broad range of criminal matters, including driving offences, where she regularly undertakes advocacy in the Magistrates’ Court, as well as corporate and regulatory crime, health and safety, food regulation and environmental issues. Rachel also has experience in cases involving fatality and serious injury, financial crime, inquests, and general criminal proceedings in both the Magistrates’ and Crown Court. Rachel also regularly advises clients who have been subject to questioning under caution by Trading Standards.
Rachel advises in relation to matters under the Licensing Act 2003, including new premises licence applications, licensing committee hearings, and issues relating to the suspension or revocation of licences. She also supports local authorities on licensing policy and related regulatory matters.
She is a member of the firm’s viticulture and food and beverage sector groups, where her experience in licensing, alcohol wholesale regulation, and food hygiene / regulation places her well to support clients in these industries, as well as any related local authority product recall considerations.
Recent work highlights
Advised for a group of Mayfair residents at a licensing sub-committee hearing, coordinating and advancing objections to a premises licence application for a private members’ club. This involved drafting detailed written representations and working closely with responsible authorities throughout the course of the hearing.
Advised a beverage producer in relation to the potential commercial use of a novel substance and the process for submitting a “no-names” application to the Food Standards Agency (FSA) and HMRC.
Provided premises licence advice in connection with the sale of a vineyard, supporting the client throughout the due diligence process.
